Hearty Kielbasa and Lentil Soup

Don’t you just love a big bowl of steaming Keilbasa and Lentil soup on a chilly day? I know I do!

Now if you’re like my husband, you’ll want it on a plate and not so steamy…. or my children, who like it more or less lukewarm. But I digress….

Well, the other day my hubby was going to be out late, so I didn’t want to spend a lot of time in the kitchen. I love to cook, but there’s something about spending time over a nice meal for someone who appreciates it. My kids don’t quite show that appreciation yet. However, I did want a meal that I could enjoy. Since the 1st of October brought cooler weather, I decided to make some soup – a meal that’s easy to put together, but tastes like I’ve spent hours on it.

After browsing through the internet, my pantry, my refrigerator, and my freezer, I threw this together – a hearty and flavorful kielbasa and lentil soup perfect for a chilly day!

Hearty Kielbasa and Lentil Soup
  • 1 keilbasa, cubed
  • 4 ribs celery, diced
  • 1 Tbsp garlic, minced
  • 1 onion, diced
  • 1 green bell pepper, chopped
  • 2 cartons chicken broth
  • 2 carrots, diced
  • 2 handfuls green lentils
  • 1 handful brown rice
  • 1 tbsp Italian seasoning
  • salt and pepper to taste

Instructions

  1. Saute the first five (5) ingredients until the onion is translucent.
  2. Add the rest of the ingredients.
  3. Bring to a boil, then reduce to a simmer.
  4. Simmer with the lid on until the rice and lentils are cooked and the carrots are soft.
  5. Enjoy!

    That looks delicious! I LOVE when the weather turns to soup weather. Unfortunately, southern California is behind in that department..
